Chef Ariel shows us how to cook chicken with an unconventional twist. This tartar dish is creative and fresh, with a twist on how we experience tartar.

Basic Ingredients
1 peeled cucumber
1/2 portion of chicken breast, cubed
Juice from 2 fresh lemons
2 stalks of celery, cleaned peeled and diced
1/2 green apple, cubed
1/4 onion, cubed
2 shallots, finely diced
1 hand full of almond slices (roasted)
1/2 pomegranate
3 tablespoons mayonnaise
Fine herbs

Ingredients for the avocado sauce
300 grams of avocado
Juice from 1 lemon
1 teaspoon of salt

Ingredients for the balsamic sauce
200 grams of balsamic sauce
1 tablespoon of sugar
1 cinnamon stick
1 Anise star

Preparation
Grill the chicken breast on a preheated pan until golden. Place in the oven to keep warm rest of the steps are complete. Chop the celery, apple, artichoke, onion, and shallot into fine dice. Mix in the lemon juice, salt, pepper and mayonnaise.  Add the pomegranate and mix together. To prepare the avocado sauce, grind the avocado, lemon and salt in a mixer-blender until a sauce composition is formed. To prepare the balsamic sauce, heat the balsamic, sugar, cinnamon and Anise for ten minutes on a medium flame until you get a syrup. Set to cool on the side. Use the fine herbs on top for a decorative touch.  Another option is to slice a cucumber into thin, curly strips to adorn the dish.
